Eating healthy doesn't have to be challenging, it can be fun when you have the right ingredients in your kitchen.
1 cup of quinoa
Half a block of mint halloumi cheese
1 medium tomato
A Handful of lettuce
3 small sweet peppers
1 cup water
Boil quinoa for 15-20 minutes on the stove on medium temperature, allow the water to evaporate, allow to cool.
Lightly fry halloumi and sweet peppers, allow to cool then add to the quinoa.
Add salt, pepper, lettuce, tomato then toss lightly.
Serve with a chilled glass of flagstone wine, or your beverage of choice.
