Aurbergine chips 


Aubergines is not my favourite vegatable, the only way I would eat it, is if it’s prepared in this fun way and it’s all crispy.

This is a simply easy and quick snack and it’s low carb.

Here’s how to do it:


All you need is 2 aubergines (branjal) cut into thin slices 

A pinch of salt 

2 tablespoons of olive oil

1/2 teaspoon of lemon juice 

1/4 teaspoon of red masala (optional) or add chilli powder if you prefer it mild.


Place sliced aurbergines in a bowl coat all the slices in the ingredients 5 minutes before placing into the oven, on a baking tray on 180• bake till crispy for 10-15 minutes.
